But, they are disgruntled with the lack of taste… Today, we came up with one such innovative veggie biryani that you might have never thought of – 'Baingan Biryani'. It's sounds odd, but it's delicious. Here, is the preparation for you…
Main Ingredients List
6 brinjals; 1 ½ cup rice; 1 onion; 1 tomato; ½ cup curd; 1 tbsp ginger-garlic paste; 6 green chillies; ½ tsp turmeric powder; 2 stalks mint leaves; 3 sprigs coriander leaves; Salt to taste; Oil as required; Water as required; 2 tbsp ghee
4 cloves; 1 small cinnamon stick; ¼ tsp fennel seeds; 2 cardamom; 1 bay leaf; 1 star anise
Ingredients For Marination
½ tsp chilli powder; ¼ tsp turmeric powder; 1 tsp lemon juice and salt
Clean and soak the rice for 30 minutes. Chop the onion, tomato, mint leaves, coriander leaves, green chillies and keep it aside. Cut the brinjals into desired size and marinate them with marination ingredients in a bowl and set aside for 10 minutes.
Procedure For 'Baingan Biryani'
Saute the spices in heated oil until nice aroma comes out. Add onions and fry till translucent. Then, add chopped green chillies, mint leaves, half of the coriander leaves, ginger-garlic paste and fry them well till raw smell goes off.
Now, add tomato pieces and saute them well for a while. Now, it's time to add marinated brinjal pieces, curd and let it cook on low flame for 5 minutes.
Strain the rice and add it to the sauteed brinjal mixture along with 2 cups of fresh water.
Allow them to cook on low flame with closed lid. Gently, stir it occasionally until the rice become tender.
Finally, baste the ghee and sprinkle the remaining coriander leaves over rice.
Serve the hot 'Baingan Biryani' to finish off the plate in jiffy.
