Ridge gourd - Most of us doesn't like to devour this insipid veggie, but it's low fat and high in dietary fibre which is a perfect ingredient for weight watchers. Let's turn this unappetizing veggie into the palatable dish by adding our favourite egg and prepare the delicious 'Ridge Gourd Egg Fry'.

Ingredients

Beerakaya- Egg Fry
  • 2 ridge gourds

  • 2 eggs

  • ½ cup chopped onions

  • ½ tsp ginger-garlic paste

  • ½ tsp chilli powder

  • ½ tsp cumin seeds

  • ½ tsp mustard seeds

  • ¼ tsp cumin powder

  • ¼ tsp coriander powder

  • ¼ tsp turmeric powder

  • 1 stalk curry leaf

  • Oil as required

  • Salt to taste

Prior Method

Cut the ridge gourd into desired sized pieces; beat the eggs in a bowl and keep it aside.

Method To Follow

  1. Saute mustard seeds, cumin seeds, chopped onions in heated oil till translucent. Then, goes ginger-garlic paste, turmeric powder, cumin powder, coriander powder, chilli powder, salt and fry it well for a while.

  2. It's time to add ridge gourd pieces and mix it well until the pieces coated with the sauteed spices. Let it cook with on low flame until water levels reduce.

  3. Now, the egg comes in. Slowly, pour the egg mixture with stirring. Toss the egg-ridge gourd mixture on high flame for 2 minutes. Take it off the flame and transfer it into a serving bowl.
