Ingredients For Paneer Marination
Schezwan sauce - 1 tbsp
Tomato ketchup - 1 tbsp
Corn flour - 1 tbsp
Black pepper powder - ½ tsp
Salt to taste
Cubed paneer - 250 gm
Oil - 4 tbsp
Chopped garlic - 4-5
Chopped onions - ½ cup
Chopped carrot - ½ cup
Finely sliced beans - ½ cup
Chopped capsicum - ½ cup
Chopped spring onion greens - ¼ cup
Sweet corn - ½ cup
Black pepper powder - 1 tsp
Salt to taste
Soy sauce - 1 tsp
Vinegar - 1 tsp
Schezwan sauce - 2 tbsp
Cooked rice - 2 cups
Method To Prepare Schezwan Paneer Fried Rice
Into a bowl add all the marination ingredients - ketchup, schezwan sauce, cornflour, pepper powder, a little salt and mix them well. Then add the paneer cubes and mix them well until they are coated well with the mixture. Set them aside for 30 minutes.
Heat 2 tbsp of oil in a pan and add the marinated paneer cubes. Saute them well on both the sides and keep them aside.
Now heat 2 tbsp of oil in another pan and add chopped garlic and stir them well.
Then add the chopped veggies - onions, carrot, beans, capsicum, sweet corn, spring onion greens, required salt and pepper powder. Give them a quick stir and saute them for a few minutes on a high flame.
Add the vinegar, schezwan sauce and mix it well and saute for a few more minutes.
Now goes the cooked rice. Mix it well until the rice coated well with the veggies. Finally, add the fried paneer and toss it well.
