Besides the religious ritual of fasting, they also believe that fasting on these Ramadan days has myriad health benefits. Well! Everyone needs a nutritious meal to boost up their energy levels after a whole day fasting, right?
So, today we have come up with a delicious dish 'Keema Biryani' to end your fast. Have a look at the recipe here...
Ingredients List For Minced Meat
Minced meat (Keema) - 1 cup; Boiled green peas - ¼ cup (optional); Chopped onions - ½ cup; Chopped tomatoes - ¼ cup; Ginger-garlic paste - 1 tbsp; Chopped green chillies - 3-4; Chopped coriander leaves and mint leaves - Each 1 tbsp; Chilli powder - 1 tsp; Coriander powder - 1 tsp; Cumin powder - ½ tsp; Whole spices powder (Garam masala) - ½ tsp; Salt to taste; Oil as required.
Ingredients List For Rice Preparation
Rice - 1 cup; Water - 2 cups; Spices (Cardamom - 4; Bayleaf - 1; Caraway seeds - ½ tsp; Biryani flower - 1; Mace - 2 small pieces; Star anise - 1; Cinnamon - 1 small stick; Black pepper - ½ tsp); Sliced onions - ¼ cup; Mint leaves - ½ bunch; Coriander leaves - ½ bunch; Slitted green chillies - 4-5; Ghee - 2 tbsp; Salt to taste
Method To Prepare Minced Meat
Heat oil in a pressure cooker and saute onions until translucent. Then goes, ginger-garlic paste, tomatoes and fry till raw smell goes off and tomatoes become soft.
Now, add green chillies, coriander leaves, mint leaves, chilli powder, coriander powder, cumin powder, whole spices powder and saute them for a minute.
It's is time to minced meat and fry them well till the oils oozes from the sides. Now, close the lid and cook it for 2 whistles.
Take it off the flame and carefully release the pressure and open the lid. Simmer it and add boiled green peas, salt and allow it to cook for few more minutes.
Method To Prepare Rice
Coming to the rice preparation, heat ghee in another pan and saute the spices or one can steep the flavour by tying them in a muslin cloth. Now, add sliced onions and fry them well. Then goes mint leaves, coriander leaves, sliced green chillies, salt along with 2 cups of water; let them cook for a minute. Now add soaked rice and cook it until 80% done.
Method To Prepare Keema Biryani
Now, spread the cooked minced meat over cooking rice. The moisture in keema will help to cook the rice and also rice absorbs the flavour of the keema.
Let it cook with closed lid for 5 -10 minutes and switch off the flame.
Don't disturb the rice for another 5 more minutes. Thereafter, turn off the flame to lock the flavour. Carefully, stir the keema rice before serving...
Note: One can also cook the biryani by placing one layer of rice and then go with another layer of keema over rice. Repeat the same process until keema and rice is done. Finally, finish it with a rice layer.
