Quinoa Salad: A Healthy Morning Meal To Kick-Start The Week...

Salads are always a healthier option for any meal of the day, be it for the breakfast or lunch or dinner. Well! The week has already started and to kick-start it in a healthy way, opt for a good salad for your breakfast. Here we have shared you the quick and palatable 'Quinoa Salad With Citrus Dressing' shared by the chef Sanjeev Kapoor. Have a look!

Ingredients You Need

  • Cooked quinoa - 2 cups

  • Moong sprouts - ¼ cup

  • Boiled corn kernels - ½ cup

  • Pecan nuts - 7-8

  • Halved cherry tomatoes - 5-6

  • Chopped mint leaves - 1 tbsp

  • Chopped coriander leaves - 1 tbsp

  • Crushed black peppercorns to taste

  • Baby spinach leaves - 8-10

  • Salt to taste

For Citrus Dressing

  • Orange - 1 medium

  • Juice of 1 Italian lemon

  • Finely chopped celery - 1 inch

  • Dijon mustard paste - 1 tsp

Preparation

  1. Heat a pan and squeeze out the orange juice in it and then add the lemon juice, chopped celery and give a quick stir. Let it cook until it's reduced. Off the flame and allow it to cool.

  2. Into a bowl, add a cup of quinoa, sprouts, corn kernels, pecan nuts, cherry tomatoes, mint leaves, coriander leaves and mix it well.

  3. Then add the remaining quinoa and season it with some salt and black peppercorns. Meanwhile add the mustard paste to the prepared citrus dressing and mix it well and pour it over the salad.

  4. Then torn the spinach leaves to the salad and give a quick stir and serve.
