Pineapple Pachadi Recipe - A Spicy Chutney With Sweet-Tangy Fruit

Ingredients To Prepare A Chutney With Pineapple
Ripened pineapple - 1; Curd - ½ cup; Grated coconut - 1 cup; Green chillies - 4-5; Cumin seeds - ½ tsp; Small onion - 1; Finely chopped ginger - 1 tsp; Chilli powder - ½ tsp; Dried red chillies - 2; Curry leaves - 2 stalks; Turmeric powder - ¼ tsp; Mustard seeds powder - 1 tsp; Salt to taste; Water as required
Prior Process For Pineapple Pachadi
Chop the pineapple into pieces; whip the curd with little amounts of water, salt and set it aside. Slice the onions and slit the green chillies.
Method To Prepare Spicy Chutney With Luscious Fruit
Cook pineapple pieces in water along with salt, turmeric powder and chilli powder until soft.
Meanwhile, grind grated coconut, green chillies, cumin seeds, chopped onions, ginger to form a nice paste. Add ¼ tsp of mustard seeds to coconut while grinding. Keep this mixture aside.
Once the pineapples are cooked, add the ground paste. Continue cooking on a medium flame for another 8-10 minutes.
Reduce the heat and add yoghurt. Mix everything and cook for a few minutes. Later off the flame.
Heat oil in a pan. Splutter remaining mustard seeds and saute dry red chillies and curry leaves for a few minutes.
Pour the tempering seeds over 'Pineapple Pachadi' which will up the flavour of the fruit chutney...

Ingredients To Prepare Pineapple Rice
Cooked rice - 1 cup; Pineapple pieces - ¾ cup; Oil - 2 tbsp; Chopped bell pepper - 1; Chopped spring onions - ¼ cup; Chopped spring onions bulbs - ¼ cup; Cashew nuts - 12-15 (slitted); Chopped Garlic cloves - 3; Soy sauce - 1tbsp ; Chilli garlic sauce - 2 tsp; Juice of lemon; Salt to taste; A handful of chopped coriander leaves
Method To Prepare Pineapple-Egg Fried Rice
Heat a tablespoon of oil in a skillet and pour the beaten eggs; scramble them and take it into a bowl.
Now add one more teaspoon of oil to the same skillet and fry the pineapple, bell pepper pieces until the edges of the pineapple pieces get caramelised. Then goes garlic, green onions and fry them constantly for 30 seconds. Add them to the scrambled eggs and set it aside.
Now add the remaining oil and then goes cashew nuts. Fry till they turn into golden brown. It's time to add cooked rice, salt and carefully toss for 1-2 minutes.
Then, stir in scrambled eggs, bell pepper, pineapple pieces, garlic and green onions for a minute.
Now, sprinkle chilli garlic sauce, juice of lemon, soy sauce, chopped coriander leaves and give a quick stir to combine well. Take it off the flame and dish out.
Savour the hot Pineapple-Egg Fried Rice with tomato ketchup or chilli sauce...
