Soups are one of the comfort foods in monsoon as most of the people like to incorporate them in their every day menu. And moreover, soups are easy to prepare and are healthy as well. This is why many people prefer them. Well! Are you a soup lover? Then here is a super-delicious soup waiting for you. It's 'Peanut Soup' - an African special soup.

Peanut butter - ½ cup
Tomato paste - ¼ cup
Vegetable broth - 3-4 cups
Finely chopped ginger - 1 tbsp
Chopped garlic - 4-5 cloves
Chopped kale - 1 bunch
Chopped onion - 1
Roughly chopped peanuts - ¼ cup
Spicy chilli sauce - as per your taste
Salt to taste
Oil - 1 tbsp
Heat oil in a wok and saute the onion, garlic and ginger until aromatic. Then goes the vegetable broth, salt to taste and bring it to boil for a while and simmer it for 15-20 minutes.
Mix the peanut butter, tomato sauce in a bowl then add 2 cups of boiling broth to it and stir it well.
Now pour this mixture into the remaining boiling broth and let it boil on a low flame for a minute.
Now stir in chopped kale and 3-4 tsp of chilli sauce. Let it cook for 10-15 minutes by stirring it often.
Check the consistency and taste, add more salt and chilli sauce (if needed). Take it off the flame, dish it out and garnish with the chopped peanuts.
