The most awaiting Ramadan festival is only a day away. And, the whole city, especially the Masjids are colourfully decorated welcoming the Eid. Badam Kheer

Ingredients You Need

  • Almonds - ¾ cupbadam kheer

  • Hot water - 3 cups

  • Ghee - 1 tsp

  • Chopped cashews and raisins - 2 tbsp each

  • Pistachios to garnish

  • Milk - 5 cups

  • Saffron - ½ tsp

  • Khoya - ¼ cup

  • Sugar - ¼ cup

  • Cardamom powder - ¼ tsp

Method To Prepare Badam Kheer

  1. Soak the almonds in hot water for 30-60 minutes and then drain the water. Peel the almonds and blend them into a smooth paste and set it aside.

  2. Heat a tsp of ghee in a pan and roast the nuts, raisins and set them aside.

  3. Now in another bowl, heat the milk and add saffron. Mix it well and let it boil for 15-20 minutes until the milk thickens slightly.

  4. Then goes the almond paste. Mix it well until it is combined well with the milk and let it boil for a few more minutes on a medium flame.

  5. When you get a creamy texture, add the khoya and stir it well. Now add the sugar, cardamom powder and give it a nice stir until the sugar dissolves completely.

  6. Finally add the fried nuts and let it boil for 5 minutes. Off the flame, dish it out and garnish it with the chopped pistachios.

The yummy 'Badam Kheer' is ready to serve now...

Carrot Kheer

Ingredients You Need

  • Grated carrot - 1½ cupscarrot kheer

  • Milk - 4 cups

  • Ghee - 2 tbsp

  • Saffron - ¼ cup

  • Khoya - ½ cup

  • Sugar - ¼ cup

  • Cardamom powder - ¼ tsp

  • Cashews, Raisins - 2 tbsp each

  • Pistachios to garnish

Method To Prepare Carrot Kheer

  1. Heat 2 tsp of ghee in a pan and fry the cashews and raisins. Set them aside.

  2. To the same pan, add the remaining ghee and saute the grated carrot for a few minutes on a medium flame.

  3. When the carrot turns aromatic, add the milk and saffron. Mix them well and let it boil for 10-15 minutes by stirring it occasionally.

  4. Now add the khoya, sugar, cardamom powder and mix it well. Boil it for 10 more minutes and finally add the fried nuts and turn off the flame.

Paneer Kheer

Ingredients You Needpaneer kheer

  • Crumbled Paneer - ½ cup

  • Sugar - ¼ cup

  • Milk - 3 cups

  • Ghee - 1 tsp

  • Cashews - 7-8

  • Raisins - 5-6

  • Cardamom powder - ¼ tsp

  • Chopped nuts to garnish (almonds, pistachios)

Method To Prepare Paneer Kheer

  1. Heat the ghee in a pan and add the cashews, raisins. Roast them well and add the milk into it.

  2. Stir it well and let it boil for some time until the milk starts thickening.

  3. Now add the sugar, paneer and mix them well. Boil it until the paneer cooked well and finally add the cardamom powder. Simmer it for 5 more minutes and off the flame.

  4. Dish it out and garnish it with the chopped nuts and serve hot.

The palatable 'Paneer Kheer' is ready to tickle your taste buds.
