Rasam is one of the traditional dishes that we all are habituated in our daily lives where one can't complete their meal without tasting this delicious dish. And moreover, the marriages and functions are not an exception for this recipe as most of the people like to include it in the marriage menus.
Well! Have you ever wondered why the rasam served at marriages (so-called as Kalyana Rasam) has that tongue-tickling taste? The addition of well-balanced spices and tanginess gives that delicious taste to that Kalyana Rasam.

Ingredients For Rasam Powder
Oil/ ghee - 1 tsp
Coriander seeds - 2 tbsp
Pigeon gram - 2 tbsp
Black peppercorns - 1 tbsp
Red chillies - 2-3
Cumin seeds - 1 tbsp
Chopped tomato - 1
Green chilli - 1
Tomato puree - ½ cup
Tamarind - a small lemon sized (soaked)
Boiled and mashed pigeon peas - ¼ cup
Salt to taste
Turmeric powder - ¼ tsp
Pounded garlic - 4-5 (optional)
Asafoetida - ¼ tsp
Cumin seeds - ½ tsp
Mustard seeds - 1 tsp
Ghee/ oil - 1 tsp
Chopped coriander leaves to garnish
Heat a tsp of ghee in a pan and saute all the rasam powder ingredients for a few minutes and blend them into a fine powder. Set this aside.
Extract the tamarind juice by adding required water and set it aside.
Method To Prepare Kalyana Rasam
Boil a cup of water in a pan and add the chopped tomato, green chilli and let it boil for few minutes.
Now add the tomato puree, tamarind juice and mix them well. Cover and cook it for few minutes on a medium flame.
Then add the mashed pigeon pea mixture, salt, turmeric, garlic, curry leaves and give them a quick stir.
Cover and cook it for 5 minutes and then add 3 tbsp of blended rasam powder and mix it well. Let it boil for few more minutes and take it off the flame.
Now heat a tsp of oil in another pan and saute the mustard seeds, cumin seeds and asafoetida. Add this tadka to the prepared rasam and mix it. Finally, garnish it with the coriander leaves.
