Green Quinoa Salad: A Healthy Option For Winter Breakfasts...

Salads are a healthy option for all the fitness freaks but what about others? Most of the people in the mask of eating healthy, prefer salads with heavy cheese toppings, excess oils, etc., which is completely unhealthy. And, when it comes to this chilled season, eating healthy is a must for all of us.

So, if you are a salad lover, then here is a delicious yet wholesome salad recipe, 'Green Quinoa Salad' for you. Have a look!

Ingredients

  • Quinoa - 1 cupquinoa salad

  • Vegetable stock or water - 2 cups

  • Broccoli florets - 1½ cups

  • Roasted cashew nuts - ½ cup

  • Yellow or green zucchini - 1

  • Edamame or peas - ½ cup

  • Spring onion - 1-2

  • A handful of basil leaves

  • Olive oil - 3 tbsp

  • Ground cumin - 1 tsp

  • Garlic clove - 1 large

  • Lemon - 1

  • Sliced avocado - 1 (optional)

  • Chilli flakes to sprinkle (optional)

Method

  1. Place quinoa and vegetable stock or just water (as preferred) into a saucepan and bring to a boil. Place a lid on top and reduce to a simmer for approximately 15 minutes until cooked.

  2. Set aside with the lid on to cool for five minutes. Meanwhile, steam broccoli florets and set it aside.

  3. Slice the zucchini lengthwise and chop finely. Also finely chop the spring onion, basil leaves and garlic clove.

  4. Combine all these ingredients with shelled edamame beans or peas, olive oil, ground cumin, juice and finely grated zest of a lemon, along with the cooked quinoa.

  5. Season generously with salt and cracked black pepper. Top it up with the toasted cashew nut pieces, sliced avocado and chilli flakes (if using), just prior to serving.
