200g dark chocolate
200g unsalted butter
1 tsp coffee powder
250g caster sugar
100g cocoa powder
A pinch of salt
5-10 Strawberries (optional)
Melt chocolate and butter in a bowl and stir it occasionally until a soft and glossy texture is formed. Add coffee powder and bring it to boil and then allow it to cool. Separate the egg whites and yolks in two large bowls. Preheat the oven at 160˚ C and grease the baking mould and keep it aside.
Method To Prepare 'Flourless Cake'
Beat the egg whites until peak foam. Then, whisk the egg yolks with caster sugar for 5 to 10 minutes and add ¾ part of cocoa powder, salt and stir it well.
Mix the egg yolks mixture with chocolate mixture. Now, combine it with egg whites and whisk it well into a smooth mixture.
Transfer the mixture into a baking mould and bake it for 50 minutes to 1 hour.
Rest it to cool and then demould it, dust it with remaining cocoa powder and garnish it with strawberries.
