Well! Here we have doled out the yummy chicken recipe i.e., 'Chicken Handi' - a special recipe which is actually prepared in a pot. Worry not! If pot is not available, you can also prepare it in any other dish. So without any delay, let's jump into the recipe...

Ingredients To Marinate Chicken

  • Chicken - 300 gm

  • Curd - 1 cup

  • Juice of a lemon

  • Turmeric powder - 1 tsp

  • Red chilli powder - 1½ tbsp

  • Pepper powder - 1 tsp

  • Cumin powder - 1 tsp

  • Coriander powder - 2 tsp

  • Salt to taste

Other Ingredients

  • Oil - 1 tbsp

  • Ghee - 2-3 tsp

  • Whole spices (bay leaf, cinnamon, cloves, cardamom)

  • Chopped onion - 1 large

  • Tomato puree - 1 cup

  • Green chillies - 2-3 slitted

  • Ginger garlic paste - 1 tbsp

  • Cashew paste - ½ cup

  • Handful of chopped coriander leaves

  • Water as required

Preparation Of Chicken Handi...

  1. Take the chicken into a bowl and add all the marination ingredients - curd, lemon juice, turmeric powder, pepper, red chilli powder, cumin powder, coriander powder and salt to taste. Mix them well and let it sit for about 30-60 minutes.

  2. Now heat the oil and ghee in a pan and add the whole spices, then goes the onions. Saute the onions and green chillies until golden brown. Add ginger garlic paste and give a nice stir.

  3. Then add the chopped coriander leaves, tomato puree and mix them well and cook for few minutes.

  4. Now goes the marinated chicken. Mix it well and add a glass of water and some salt. Stir it well and close the lid.

  5. Let it cook for 20-30 minutes until the chicken becomes tender. Then add the cashew paste and stir it well. Cook for another few minutes and take it off the flame.

The mouth-watering 'Chicken Handi' is ready to serve now. Enjoy it with roti or naan or hot steamed rice.
