Butter Chicken/ Murgh Makhani is one of the favourite chicken recipes for the most of the people across the world. And, moreover, it is the most preferred item in restaurants. The grilled chicken, cooked in the silky and buttery tomato gravy will make us drool over it. Well! Besides devouring this delicious butter chicken in restaurants, do prepare it at your condo this weekend. Here is the recipe for you. Have a look!
Ingredients For Chicken Marination
Chicken - 400 gm
Salt to taste
Lemon juice - 3 tbsp
Ginger garlic paste - 1 tbsp
Mustard oil - 4 tbsp
Kashmiri red chilli powder - 1½ tbsp
Hung curd - 1 cup
Ingredients For Gravy
Water - 2 cups
Roughly chopped tomatoes - 500 gm
Sliced onion - 1
Bay leaf - 1
Cinnamon - 1
Cardamom - 3
Garlic cloves - 7-8
Ginger - 1 small piece
Kashmiri red chilli powder - 1 tbsp
Butter - 2 tbsp
Cashew nuts - 10-12
Butter - 2 tbsp
Chopped ginger - ½ tsp
Slitted green chilli - 1
Oil - 1-2 tsp
Kasuri methi - ½ tsp
Sugar - ½ tbsp
Fresh cream - 2-3 tbsp
Chopped coriander leaves to garnish
For the first marination, mix in the ingredients - chicken, salt to taste, ginger-garlic paste and 2 tbsp lemon juice in a bowl and set it aside for 15-20 minutes.
Now into a bowl, add mustard oil, 1½ tsp Kashmiri red chilli powder, hung curd, salt to taste, 1 tbsp lemon juice and whisk it well.
Add the marinated chicken into this hung curd mixture and mix it well. Let it sit for 15-20 minutes. Make sure that you squeeze the chicken before adding it to hung curd.
Preparation Of Butter Chicken
Heat the water in a bowl and add all the gravy ingredients - tomatoes, onions, bay leaf, cinnamon, cloves, cardamom, garlic, ginger, red chilli powder, butter and cashew nuts. Mix them well and cover and cook until the tomatoes become soft and mushy.
Off the flame and blend this tomatoes mixture into a fine puree. Drain the puree by adding little water to extract the silky gravy. Set this gravy aside.
Now heat 2 tbsp of butter in a pan and add chopped ginger, green chilli and stir it well. Then add the prepared gravy to it and give a quick stir. Let it cook 15-20 minutes on a medium flame.
Meanwhile, on the other side, heat a grilling pan and drizzle 1-2 tsp of oil. Place the marinated chicken on it and cook it both the sides until soft. Make sure that you don't flip the chicken multiple times.
Now add some salt, kasuri methi, sugar into the boiling puree and mix it well. Then add the cooked chicken, fresh cream and give a nice stir. Let it cook for 5-10 minutes.
Off the flame and dish it out. Marinate the butter chicken with some fresh cream and coriander leaves.
The yummy, soft 'Butter Chicken' is all set to devour now. Have it with naan or roti.
