Ingredients List
2 cups cooked rice; 1 medium sized chopped onion; 1 tbsp lemon juice; Tempering seeds (2 tbsp cashews or peanuts; ½ tsp mustard seeds; ½ tsp cumin seeds; 1 tsp skinless split black gram; 1 tsp Bengal gram; 4 dried red chillies); Water as required; 2 tbsp ghee; Salt to taste

¼ bunch mint leaves; ½ bunch coriander leaves; 1-inch piece ginger; 4 garlic cloves; 5 green chillies; Masala spices (1 small cinnamon piece; 1 star anise; 1 tsp fennel seeds; 3 cloves; 2 cardamom pods)
Method To Prepare Mint-Coriander Rice
Blend the 'Mint-Coriander Paste' ingredients into a fine paste and set it aside for further usage.
Heat oil in a wok and saute the tempering ingredients until cashews or peanuts turn into slight golden brown. Then add chopped onions and fry them well till soft.
Now add the mint-coriander paste, salt and let it cook on low flame to get rid of the raw smell by stirring occasionally.
add rice and toss it till rice is coated well with the mint-coriander flavour. Give a final touch with lemon juice and take it off the flame.
